Lately, I’ve been doing a lot more cooking and drink-making during quarantine to keep myself busy! I’ve shared food recipes on my blog, but today I’m sharing a delicious drink recipe. It’s perfect for the spring/summer when you want something cool and refreshing!
I recently planted herbs, which make for great cocktail garnishes. My mint is growing quickly and has been a delicious additive to my iced tea! I was craving a refreshing mojito the other day but didn’t have any rum or lime on hand, so I improvised with Prosecco! I give you, the Raspberry Lemon Prosecco Mojito. Feel free to omit the Prosecco to make it a mocktail!
The below recipe makes 1 drink.
Ingredients:
- Prosecco
- Seltzer water
- Raspberries
- 1 half of a lemon or lime (juiced)
- Mint
- Ice
Directions: Muddle raspberries and mint together at the bottom of a glass. Then, fill the glass halfway with Prosecco. Add in ice, juice from half of a lemon (or lime) and top with seltzer water.
