Edamame Pasta with Cherry Tomatoes, Basil and Ricotta Recipe

If you’re looking for a delicious gluten free pasta, I highly suggest trying the Edamame pasta from Aldi. It’s one of my favorite gluten free pastas because it’s delicious and can be served many different ways (with pesto, shrimp, olive oil, etc.). Here’s a quick and easy recipe for this pasta. Ingredients:

  • Edamame pasta from Aldi
  • Cherry tomatoes (sliced)
  • 1 Cup Ricotta cheese
  • Basil leaves
  • Juice from half of a lemon
  • EVOO
  • Salt
  • Pepper
  • 1/2 cup reserved pasta water

Directions: Sauté sliced cherry tomatoes with basil leaves in EVOO, salt and pepper. In a pot of boiling salted water, cook edamame pasta and save about 1/2 cup of reserved pasta water. In a serving bowl, combine and mix lemon juice, 1/2 cup pasta water and 1 cup Ricotta cheese. Add in pasta and mix together (I like to drizzle a little EVOO and toss the pasta to avoid it from sticking to the dish). Top with basil leaves, lemon slices and a dollop of Ricotta cheese.
