Hulu & Netflix Recommendations May ‘20

Does anyone else feel like they’ve watched just about everything Netflix and Hulu have to over? Not to worry, I put together some recommendations for movies and tv series on the two streaming platforms for you. Check them out below and let me know some of your own recommendations!

Quarantine Tortellini Soup

I’m sharing a soup recipe that I have now named ‘Quarantine Tortellini Soup’ because I eat it on the regular. It’s tasty and a great way to sneak some kale into your meal. Soup details below.
Ingredients:

  • 4 cups chicken or vegetable stock/broth
  • 1/2 cup water
  • 1 cup chopped kale
  • 2 carrots peeled & thinly sliced
  • 1 celery rib sliced
  • 2 tablespoons EVOO
  • Salt
  • Pepper
  • Italian seasoning
  • Tortellini pasta
  • Shaved Parmesan cheese
Directions:
In a stock pot, combine stock/broth, water, kale, carrots, celery, salt, pepper and Italian seasoning. Bring to low-medium heat and cover. Let simmer for 25 minutes. Add in EVOO and tortellini. Cook until tortellini are al dente. Top with shaved Parmesan cheese.

Lemon & Parsley Rice

Quarantine has involved a lot of snacking and indulging in food/drinks that I don’t normally consume on the regular. If your stomach can also use a break from heavy meals, try this easy lemon + parsley white rice recipe that I whipped up. It’s light and easy on the stomach for when you need a little reset.

Ingredients:

-3 cups white rice

-juice from half of a lemon

-lemon zest

-2 tablespoons olive oil butter (regular butter will work just fine too)

-salt

-pepper

-chopped parsley

Directions:

Cook white rice as directed. In a bowl, combine cooked white rice, olive oil butter, salt, pepper and lemon juice. Add in chopped parsley and mix well. Top with lemon zest and enjoy!

Use the other half of the lemon in your water to add a delicious kick of flavor.
