Fig & Prosciutto Pretzel Sandwich

If you’re in need of some lunch inspiration this week, I have just the sandwich for you. I was inspired to create this delicious Fig & Prosciutto sandwich from one of my favorite sandwiches at a local restaurant. I have to say, this version is pretty darn close to the restaurant one (if I do say so myself). Get the details of this tasty recipe below and add or substitute to your liking!

Ingredients:

-Prosciutto

-Arugula

-Blue Cheese (I usually buy a wedge, but crumbled blue cheese will work too)

-Fig Jam

-Pretzel Bun

Directions: Slice the pretzel bun in half and spread fig jam on each half of the bun. Add prosciutto (for me, the more the better) and spread your blue cheese on top. Finish by adding arugula on top. Eat and enjoy!

Edamame Pasta with Cherry Tomatoes, Basil and Ricotta Recipe

If you’re looking for a delicious gluten free pasta, I highly suggest trying the Edamame pasta from Aldi. It’s one of my favorite gluten free pastas because it’s delicious and can be served many different ways (with pesto, shrimp, olive oil, etc.). Here’s a quick and easy recipe for this pasta. Check out the recipe for my edamame pasta with cherry tomatoes, basil & ricotta below.

Ingredients:

  • Edamame pasta from Aldi
  • Cherry tomatoes (sliced)
  • 1 Cup Ricotta cheese
  • Basil leaves
  • Juice from half of a lemon
  • EVOO
  • Salt
  • Pepper
  • 1/2 cup reserved pasta water

Directions: Sauté sliced cherry tomatoes with basil leaves in EVOO, salt and pepper. In a pot of boiling salted water, cook edamame pasta and save about 1/2 cup of reserved pasta water. In a serving bowl, combine and mix lemon juice, 1/2 cup pasta water and 1 cup Ricotta cheese. Add in pasta and mix together (I like to drizzle a little EVOO and toss the pasta to avoid it from sticking to the dish). Top with basil leaves, lemon slices and a dollop of Ricotta cheese.

Ginger Peach White Wine Spritzer Recipe

Since I’m not yet comfortable going out to a restaurant for cocktails, I’ve been playing around with some easy drink recipes at home. Today, I’m sharing a quick and easy spritzer! For my cocktails, I try to use ingredients I have around the house, but I’ve been craving something refreshing with peach, so I headed to Target and found the perfect ingredient, ginger peach sparkling water. Here’s what you will need for this Ginger Peach White Wine Spritzer:

Ingredients:

  • Chilled White Wine (I used Viognier)
  • Ginger Peach Sparkling Water (this is the Good & Gather brand from Target but any brand or other flavor will do)
  • Peach slices
  • Ice

Directions: Fill a wine glass halfway with the chilled white wine and top with the sparkling water. Mix well and add in ice (you could even put this in a blender and make it a wine slushie – great for a hot day or sitting by a pool). Add peach slices to your glass and/or to garnish on the rim.
