Fig & Cheese Flatbread Recipe

One of my favorite restaurants recently took away their seasonal Fig & Gorgonzola flatbread (it was my absolute favorite – heartbreaking, I know). My boyfriend and I decided to try making our own version for a date night in and we were thrilled with the results. Find the delicious recipe details below.

Date night in tip: watch Netflix movie ‘Love, Guaranteed’.

Fig & Cheese Flatbread Recipe

Ingredients:

– Flatbread or pizza crust (I used the pre-cooked ones because they’re quick and easy)

– 6 Fresh figs (sliced)

– Honey goat cheese

– Gorgonzola cheese (crumbled)

– EVOO

Directions: Spread EVOO on crust or dough and then add sliced figs. Top with honey goat cheese and crumbled Gorgonzola. Bake at the recommended time and temperature listed on your pizza crust/dough package.

Enjoy!

September 2020 Intentions

Last year, I got into the habit of setting intentions for every month. Unfortunately, during quarantine I’ve kind of lost this practice. However, there’s no time like the present to pick it back up!

With the new month, I’m trying to manifest all of the good vibes and bring positive energy into September! Supposedly, if you say rabbit, rabbit at the beginning of a new month, you’re supposed to have good fortune (my grade school teacher told me this one). If you’re looking to have a good month too, try it for yourself and set your own intentions!

Here are my September 2020 intentions:

• Take more walks (explore different local areas)

• Think of time and energy as currency. Ask myself, “how much of my time/energy am I going to give this situation/person/etc.?”

• Pause throughout the day and take deep breaths (set reminders on my calendar and phone alarms)

• Try to do things with more intention and ask myself, “who am I doing this for and how is it serving me?”

What are your September intentions? Feel free to share in the comments or tag me on Instagram @geenicolette.

Sometimes, You Don’t Have To Give It Your All

We live in a world where there is so much pressure all around us. Pressure to always feel like we can do and achieve more. Pressure to be the best at anything and everything. Social media makes it harder because we’re only seeing a glamorous snapshot of someone’s life and their achievements. What we don’t see is the hard work, blood, sweat, and tears that went into those achievements and also sometimes failures. I mean, who wants to post about all of the times they failed?

There’s so many quotes out there about “giving it your all”. Instead, I want to focus on how it’s okay to not always give it your all. It’s okay to have hobbies that you enjoy and don’t make money from.

You can enroll in yoga teacher training because you want to further your yoga knowledge and never take a teaching job. It’s okay to like running but not want to train for a marathon. You can enjoy cooking and not open a restaurant. You can craft or paint and not create an Etsy account. It’s okay to do things that make you happy and you don’t have to turn them into a profession or be perfect at them.

Dictionary.com defines the word ‘hobby’ as ‘an activity or interest pursued for pleasure or relaxation and not as a main occupation’. Read that last part again, ‘…not as a main occupation’. Hobbies are important, they are a form of self-care and a way that we can decompress. The next time you are putting added pressure on yourself to ‘be better’ or ‘do more’, remember that it’s okay to have an activity that just simply makes you happy.
